Have you ever stumbled upon an ingredient that's not only versatile but also packs a punch in terms of nutrition? That's how I felt when I first discovered hemp seeds. These tiny, nutty seeds have become a staple in my pantry, and I'm constantly amazed by the variety of ways they can be used. Today, I want to share a delicious and simple recipe, Chocolate Hemp Energy Bites.

Hemp seeds are a true superfood. They are rich in omega-3 and omega-6 fatty acids, high in fibre, and a great source of complete protein, containing all nine essential amino acids. They also have a stellar array of minerals, including magnesium, zinc, and iron. Integrating hemp seeds into your diet can support heart health, reduce inflammation, and promote skin and hair health. 

Before we dive into the recipe, let's appreciate the versatility of hemp seeds for a moment. Their subtle, nutty flavour makes them a perfect addition to sweet and savoury dishes. They blend beautifully into a pesto, giving it a nutritious boost without overwhelming the other flavours. Or, try blending them into a dairy-free parmesan alternative that will have you questioning why you ever needed cheese in the first place. And let's not forget how they can elevate a simple salad with a satisfying crunch. The possibilities are endless, and I encourage you to experiment with them.

So, grab your apron and let's get cooking! 

Chocolate Hemp Energy Bites

(Makes approx. 15 balls)

Ingredients:

• 1 cup Medjool dates, pitted 
• 1/2 cup raw almonds, sunflower seeds, or pumpkin seeds 
• 1/3 cup unsweetened cocoa powder
• 1/4 cup (plus extra for rolling) Hemp seeds
• 1 tsp vanilla extract 
• pinch of sea salt 
• 2 tbsp water

Directions:

1. In a food processor, blend the dates and your choice of either almonds, sunflower seeds or pumpkin seeds until they reach a sticky, crumbly texture.
2. Add cocoa powder, hemp seeds, vanilla extract, and a pinch of sea salt. Process until the mixture starts to come together. If it's too dry and not forming a dough-like consistency, add water one tablespoon at a time, processing in between until it's just sticky enough to be rolled into balls.
3. Form the mixture into balls using a tablespoon as a scoop. You should get approximately 12-15 energy bites.
4. Roll the formed balls in extra hemp seeds to coat the outside.
5. Chill the energy bites in the refrigerator for at least one hour to set before serving.
