One-Pan Salmon Dinner

Sheet pan dinners are quick, simple, nutritious, and easy to clean up, and they make great leftovers.

This protein-rich recipe is perfect for a weeknight meal, and the glaze is so delicious it can also be used in stir-fries or bowls.

Save this recipe for a meal that is sure to become a regular in your rotation!

One-Pan Salmon Dinner

(makes 4 servings)

Ingredients:

● 2 heads of chopped broccoli florets
● 1 tbsp minced garlic
● 3 tbsp avocado oil
● Sea salt and freshly ground black pepper
● ¼ cup tahini
● 1 lemon, juiced
● 2 tbsp gluten-free soy sauce
● 1 tbsp grated ginger
● ¼ tsp red chilli flakes
● 4 salmon filets
● 1 tbsp sesame seeds, toasted

Directions:

1. Preheat the oven to 450ºF. In a large bowl, toss broccoli with garlic, avocado oil, salt, and pepper. Place the broccoli in a single layer on a foil-lined rimmed baking sheet and roast for 8 minutes.

2. Mix tahini, lemon juice, soy sauce, ginger and chilli flakes in a bowl while roasting broccoli. If the mixture is too thick, add a little water until it reaches a glaze consistency. Divide the glaze into two containers and store one for later use in a stir fry or bowl.

3. Remove the broccoli from the oven and place the salmon filets on top of the broccoli. Spread the tahini glaze over the fish. Season the entire tray with sea salt.

4. Place the baking sheet back in the oven and roast an additional 5-8 minutes, until the broccoli is tender and crispy and the salmon flaky.

5. Remove the baking sheet from the oven and top with toasted sesame seeds.

6. Serve and enjoy.
