Oregano Lemon Chicken

Oregano has always been a staple in my herb garden. Its unique aroma and flavour have inspired me to experiment with various dishes, and one of my favourites is Oregano Lemon Chicken. This dish not only celebrates the vibrant taste of oregano but also brings together a delightful combination of flavours that I know you will love.

But the appeal of oregano goes beyond its wonderful taste. It's rich in antioxidants, which can help combat oxidative stress in the body and contains compounds with potential antimicrobial properties, contributing to better immune health. Paired with the vitamin C from the lemon, this dish is as nourishing as it is delicious.

The recipe is a fantastic combination of tender chicken breasts infused with the aromatic flavours of oregano and zesty lemon. The richness of feta cheese, the freshness of cherry tomatoes, and the tanginess of Kalamata olives add complexity to the dish, making every bite a delightful experience.

Oregano Lemon Chicken

(Serves 4)

Ingredients:

• 4 boneless, skinless chicken breasts
• 2 tbsp fresh oregano, chopped (or 2 teaspoons dried oregano)
• 1 lemon, zested and juiced
• 4 garlic cloves, minced
• ¼ cup olive oil
• Salt and pepper to taste
• 1 cup cherry tomatoes, halved (or you can leave whole) 
• ½ cup Kalamata olives, pitted and halved
• ½ cup feta cheese, crumbled
• Fresh parsley for garnish (optional)

Directions:

1. Combine the oregano, lemon zest, lemon juice, garlic, olive oil, salt, and pepper in a bowl. Add the chicken breasts and coat them well with the marinade. Cover and refrigerate for at least 30 minutes or up to 2 hours for more flavour.
2. Preheat the oven to 400°F.
3. Heat a large oven-proof skillet over medium-high heat. Remove the chicken from the marinade and sear it on each side for 2-3 minutes until golden brown.
4. Scatter the cherry tomatoes and olives around the chicken in the skillet.
5. Transfer the skillet to the preheated oven and bake for 15-20 minutes until the chicken is cooked and no longer pink in the center.
6. Sprinkle the feta cheese over the chicken and return to the oven for 2-3 minutes until the cheese is slightly melted.
7. Remove from the oven and garnish with fresh parsley if desired. Serve hot with rice, pasta, or a green salad.

Feel free to adjust the amount of oregano to taste or add a pinch of red pepper flakes for a little heat.
