Ever find yourself in a breakfast rut? I sure have. There I am, staring into the fridge, and there they are—eggs. Again. It's not that I don't like them. It's just that sometimes you wake up craving something different. That's how I stumbled upon this gem: Apple Muesli with Seeds and Grains. It's been a nice change to my mornings, and I think you might like it, too.

Before the recipe, let's discuss why muesli is worth considering for breakfast. It's loaded with fibre from the oats and apples, which keeps you full and your digestion happy. Then, you throw in a bunch of seeds and nuts, and suddenly, you've got this meal that's not only tasty but also packed with good fats, protein, and antioxidants. It's a bowl full of good stuff that starts your day right.

Apple Muesli with Seeds and Grains  

(Servings - Makes about 4 to 6 servings, depending on portion sizes)

Ingredients:

• 2 cups gluten-free rolled oats
• 3 cups almond milk, soy milk, or dairy milk
• 2 large apples, washed, skin on, grated
• ½ cup almonds or walnuts, roughly chopped
• ½ cup raisins or dried cranberries
• ¼ cup pumpkin seeds
• ¼ cup sunflower seeds
• ¼ cup chia seeds
• ¼ cup ground flaxseeds
• 2 tsp cinnamon (or to taste)

Directions:

1. Combine the rolled oats, grated apple, chopped nuts, dried fruit, pumpkin seeds, sunflower seeds, chia seeds, flaxseeds, and cinnamon in a large mixing bowl. Stir well to ensure an even distribution of all ingredients.

2. Pour the milk over the oat mixture, stirring to combine everything thoroughly.

3. Cover the bowl with a lid or plastic wrap and refrigerate overnight. This step allows the oats and seeds to soften and absorb the flavours, creating a delicious muesli. You can also portion out the dry mixture and milk into mason jars. 

4. The following day, stir the muesli well. If it appears too thick, you can adjust the consistency by adding a little more milk. If not using the mason jars, serve the muesli in bowls and top with fresh fruit, if desired.
