Baked Salmon with Pineapple Cherry Salsa

Baked Salmon is a delicious and healthy meal option perfect for any occasion. It's easy to prepare, flavourful, and packed with protein and omega-3 fatty acids. Adding a fresh and fruity pineapple cherry salsa takes this dish to the next level, making it a colourful and refreshing meal perfect for any day of the week. 

Baked Salmon with Pineapple Cherry Salsa 

Serves 4 

Ingredients:

• 1 2lb salmon fillet
• 4 small Thai chillies, stems removed
• 1 large garlic clove, peeled
• 1 tsp fresh ginger, grated
• ½ tsp fresh turmeric, grated
• ½ tsp sea salt
• ¼ cup fresh lemon juice
• ¼ cup olive oil

Directions: 

1. Remove the Salmon from the fridge and let it come to room temperature while preparing the marinade.
2. Preheat the oven to 350ºF, line a baking sheet with unbleached parchment paper, and set aside.
3. Put chillies, garlic, ginger, turmeric, sea salt, lemon juice and olive oil in a blender and blend until smooth and creamy.
4. Place Salmon on the baking sheet, skin side down, brush all over with the marinade, and let sit for 5 minutes.
5. Put Salmon in the oven, uncovered, and bake for about 15-20 minutes. Cooking time will vary depending on the thickness of the Salmon. The thinner the fillet, the less time and the thicker the fillet, the more time. Just check on the Salmon before the time is up to ensure it is cooked to your liking.
6. Serve with Pineapple Cherry salsa.

Pineapple Cherry Salsa

Servings 4 

Ingredients:

• 1 cup frozen dark cherries, thawed and diced
• 1 cup frozen pineapple, thawed and diced
• 1 small jalapeno, seeded and finely diced
• ½ medium red onion, finely diced
• 1 tbsp cilantro, finely minced
• 1 lime, juiced
• ¼ tsp sea salt

Directions: 

1. Mix all ingredients in a medium-sized bowl until well combined; let sit for about 10 minutes.
2. Serve with Salmon.
