Balsamic Veggie Medley

(Serves 8-10)

Ingredients:

• 6 peppers red, yellow, or orange bell peppers
• 6 stalks of celery
• 3 Roma tomatoes, seeded
• 3 carrots
• 1 large white onion
• 1 5.5 oz can of tomato paste
• 1 tbsp of ghee
• 3 tbsp of balsamic vinegar (adjust to taste)
• 1 tsp sea salt (adjust to taste)

Directions:

1. Start by dicing all your veggies into small pieces.
2. Heat the ghee in a large skillet or pan over medium heat.
3. Add the diced veggies to the pan and sauté them in the ghee for about 5 minutes, or until they begin to soften.
4. Once the veggies are softened, stir in the tomato paste until it's well combined with the veggies.
5. Reduce the heat to low, cover the pan, and allow the veggies to simmer or steam until they reach your desired tenderness.
6. After the veggies are cooked to your liking, stir in the balsamic vinegar. Taste and adjust the amount of vinegar according to your preference.
7. Season the dish with sea salt to taste.
