Step into my backyard with me, and you'll be greeted by the breathtaking sight of my flourishing herb garden. Among all the greenery, there's one plant that never fails to captivate me – the magnificent basil. Today, I want to share my recipe for my Basil Vinaigrette, made from the very basil grown in my garden.

Before we delve into the recipe, let's explore basil's incredible health benefits – this unassuming herb is a powerhouse of flavour and nutrients. With essential vitamins like vitamin K, vitamin A, and vitamin C, basil is a nutritional gem. Moreover, its abundance of antioxidants helps combat oxidative stress, while its anti-inflammatory properties are believed to support digestion. Who could have imagined that this unpretentious green wonder could pack such a punch?

Basil Vinaigrette

Ingredients:

(Makes about 1 cup of dressing)

• 1 cup fresh basil leaves, packed
• ¼ cup good quality balsamic vinegar
• ½ cup extra virgin olive oil
• 2 cloves garlic, mince
• 1 tbsp Dijon mustard
• 1 tbsp honey
• 1 tsp sea salt
• ¼ tsp black pepper

Directions:

1. Begin by washing the fresh basil leaves thoroughly and gently pat them dry with a tea towel.
2. Now, in a blender, combine the basil leaves, garlic, balsamic vinegar, Dijon mustard, and honey.
3. With the blender running, slowly drizzle in the olive oil to achieve the perfect emulsification of the dressing.
4. Continue blending until the vinaigrette reaches a smooth and creamy consistency, truly capturing the essence of basil.
5. Give the vinaigrette a taste, and adjust the salt and pepper to suit your individual preferences.
6. Once ready, transfer the basil vinaigrette to a jar or an airtight container and store it in the refrigerator.

Remember that the basil vinaigrette can be refrigerated for up to a week, but give it a good shake or stir before each use, as the ingredients may naturally separate over time.
