Beet and Peach Salad

This salad recipe sounds a little strange, but it’s absolutely delicious.

It’s easy & simple enough for weekday meals and lunches … but tasty enough for entertaining.

BEET & PEACH SALAD

(makes 6 servings)

Ingredients: 

● 10 oz. spring mix salad greens or arugula
● 3 medium ripe peaches, pitted and sliced
● ½ cup good quality balsamic vinaigrette
● 398 ml can whole beets, drained and quartered (not pickled)
● ½ cup crumbled goat cheese
● ½ cup raw chopped pecans or sunflower seeds

Directions: 

1. In a serving dish, toss the beets and peaches with the balsamic vinaigrette and let sit for a few minutes.

2. Place the salad greens on a large serving platter and top with the beets and peaches, cheese, and pecans.

3. Serve immediately.

Enjoy!
