Celeriac Mash

(Serves 4)

Ingredients:

• 1 celeriac (celery root), peeled and cubed
• 2 cloves of garlic, minced
• ¼ cup low-sodium vegetable broth
• 2 tbsp olive oil or ghee 
• Sea salt and pepper to taste
• Chopped fresh parsley for garnish

Directions:

1. Boil the celeriac until tender. Drain well and set aside.
2. In a pot, sauté minced garlic in olive oil or ghee until fragrant.
3. Add the cooked celeriac, then mash until desired consistency. Alternatively, you can puree in a food processor.
4. Gradually add vegetable broth to achieve your desired consistency.
5. Season with sea salt and pepper to taste.
6. Serve the celeriac mash hot, garnished with chopped parsley.
