Cherry Balsamic Glazed Chicken

(4 servings)

Ingredients: 

4 boneless, skinless chicken breasts
1 cup fresh cherries, pitted and halved
2 tbsp balsamic vinegar
2 tbsp extra virgin olive oil
2 cloves garlic, minced
1 tsp dried thyme
Salt and pepper to taste
Fresh basil leaves, for garnish

Directions: 

1. Preheat your oven to 375°F.
2. In a small saucepan, combine the cherries, balsamic vinegar, and 1 tablespoon of olive oil. Cook over medium heat for about 5 minutes, until the cherries begin to soften and release their juices. Remove from heat and set aside.
3. heat the remaining tablespoon of olive oil over medium-high heat in a large oven-safe skillet. Season the chicken breasts with salt, pepper, and dried thyme.
4. Add the chicken breasts to the skillet and cook for 4-5 minutes on each side until golden brown.
5. Pour the cherry-balsamic mixture over the chicken breasts, reserving a small amount for later. Toss in the minced garlic, stirring to coat the chicken evenly.
6. Transfer the skillet to the preheated oven and bake for 15-20 minutes, or until the chicken is cooked through and reaches an internal temperature of 165°F.
7. Remove the skillet from the oven and drizzle the reserved cherry-balsamic glaze over the chicken.
8. Garnish with fresh basil leaves.
