Chewy Oatmeal Peanut Butter Chocolate Bites

Some days, meals don’t always line up the way we want them to. Perhaps you’re running late, your workout went longer than expected, or you simply need something on hand to bridge the gap until dinner.

That’s where these Chocolate Peanut Butter Clusters come in. They’re made with simple ingredients, easy to prepare, and keep well in the fridge for the week. Instead of reaching for a packaged bar, you can grab one of these and know exactly what’s in it.

Chewy Oatmeal Peanut Butter Chocolate Bites

Ingredients: 

  • 1 cup old-fashioned rolled oats

  • 1/2 cup sliced almonds

  • 1/4 cup chia seeds

  • 1/4 cup ground flaxseed

  • 1/4 cup unsweetened shredded coconut

  • 2 tbsp psyllium husk powder

  • 1/2 cup natural peanut butter

  • 2 tbsp coconut oil, melted

  • 1/4 cup mini dark chocolate chips (70% cacao)

  • 1 tsp vanilla extract

  • 1/2 tsp cinnamon

  • Pinch of sea salt

Directions: 

  1. Line a baking sheet with parchment paper.

  2. In a large bowl, combine oats, almonds, chia seeds, flaxseed, coconut, and psyllium husk.

  3. In a small saucepan over low heat, warm peanut butter and coconut oil until smooth.

  4. Remove from heat and stir in vanilla, cinnamon, and salt.

  5. Pour the peanut butter mixture over the dry ingredients and stir until everything is well coated.

  6. Let the mixture cool slightly (about 5 minutes), then fold in the chocolate chips.

  7. Using a spoon or small scoop, form the mixture into 16 clusters and place them on the parchment-lined baking sheet.

  8. Refrigerate for 30 minutes, or until firm.

Store clusters in an airtight container in the fridge for up to a week.

Variations & Tips

  • Nut-Free → Swap peanut butter for sunflower seed butter and skip the sliced almonds.

  • Extra Chocolatey → Drizzle melted dark chocolate over the tops before chilling.

  • Crunch Factor → Add a handful of puffed rice cereal for a lighter crunch.

  • Boost the Protein → Stir in a scoop of protein powder (you may need a touch more peanut butter to bind).
