Chickpea Curry

Chickpea Curry

(makes 4- 6 servings)

Ingredients:

  • 3 medium tomatoes, quartered
  • 2 tbsp fresh lemon juice
  • 2-inch piece of ginger, cut into small pieces
  • Large handful of cilantro
  • 1 tsp sea salt
  • ½ cup chicken or vegetable broth
  • ½ cup of coconut milk

  • 4 tbsp ghee
  • 1 medium onion, chopped
  • 1 large bell pepper, chopped
  • 2 large carrots, sliced medium-thin into quarters
  • 1 tsp cumin seeds
  • 4 cloves garlic, minced
  • 2 tsp ground turmeric
  • 2 tsp ground coriander
  • ½ tsp garam masala
  • ½ tsp ground cinnamon
  • ½ tsp ground cardamom
  • 2-19 oz cans of chickpeas, drained and rinsed
  • ½ cup chicken or vegetable broth
  • ½ cup coconut milk
  • 6 big handfuls of baby spinach 

Directions:

Step 1:

  1. Place tomatoes, lemon juice, ginger, cilantro, salt, 1/2 cup chicken broth and 1/2 cup coconut milk into a high-speed blender. Blend until well combined, about a minute.
  2. Set aside until ready to add to the chickpeas and vegetables. 

Step 2:

  1. Combine minced garlic, turmeric, coriander, garam masala, cinnamon and cardamom in a small bowl and set aside.
  2. Heat the ghee in a large pot over medium-high heat. Add the chopped onions, peppers and carrots and cook, stirring often, for about 5 minutes, then add the cumin seeds and cook until the vegetables begin to brown.
  3. Once the vegetables are brown, add another tbsp of ghee, mix and add the garlic spice mixture, and cook for another 2 minutes, being careful not to burn the spices.
  4. Add the chickpeas, curry sauce, ½ cup of broth, and ½ cup of coconut milk and stir to combine. Bring to a simmer, stirring occasionally. Lower the heat to medium-low and continue to simmer until the vegetables are tender about 15 minutes. Stir in the spinach in batches and cook until wilted.
  5. Remove from the heat and serve over rice; garnish with cilantro.
