Chickpea Salad Lettuce Wraps

(serves 4)

Ingredients:

● 19 oz can chickpeas, drained & rinsed
● 1 large ripe avocado, peeled and seeded
● ¼ cup fresh cilantro, chopped
● 1 large lime, juiced
● 1 tsp cumin
● sea salt & pepper to taste
● lettuce wraps Boston or  Romaine
● Optional add-ins: diced red onion, cucumber, tomatoes or any veggie you like or your favourite hot sauce

Directions:

1. In a medium bowl, mash the chickpeas with a fork or potato masher until they are broken down but still slightly chunky. Once mashed, add the avocado and continue mashing until the two are well combined.

2. Stir in the chopped cilantro, cumin and lime juice, mixing everything together until evenly distributed.

3. Taste the mixture and add salt and pepper to your liking.

4. Take a lettuce wrap and place a quarter of the chickpea and avocado mixture down the center of each wrap.

5. Roll up the lettuce wrap tightly, making sure to tuck in the sides as you go.

6. Serve and enjoy your delicious chickpea salad wraps!
