Eat these gluten-free banana pancakes for a snack or breakfast.
Enjoy as-is, or serve with your favourite topping.
Gluten-Free Banana Pancakes
● 1 large ripe banana
● 2 large eggs
● 1½ tbsp coconut flour
● 1 tsp vanilla
● Dash of sea salt
● Avocado oil (for frying)
1. Place the ingredients in a high-speed blender and puree until smooth. The batter should have a thick consistency but still be pourable from the blender. If it appears too thin, a small amount of coconut flour can be added to thicken it.
2. Heat a non-stick pan over medium heat and lightly grease the pan with avocado oil
3. Pour ¼ cup of batter onto the pan; use the pan to evenly distribute the batter and let it cook for about 2-4 minutes. The pancake should be golden on the bottom and firm around the edges before flipping it over and cooking for an additional 1-2 minutes on the other side.
4. Remove the pancakes from the pan with a spatula. Serve and enjoy.
