These Gluten-Free Salmon Patties have been a lifesaver in my kitchen. Not only are they delicious and easy to whip up, but they also freeze beautifully, making them perfect for meal prep.
There's something comforting about knowing that a healthy dinner can be ready in no time, especially on those days when life doesn't slow down. This recipe came to my rescue on numerous occasions, and I'm excited to pass on this little gem to you!
Salmon is a powerhouse of nutrition. It's rich in Omega-3 fatty acids, great for heart health, and an excellent source of protein. By using almond flour instead of traditional breadcrumbs, we keep these patties gluten-free and add a nice dose of vitamin E and magnesium. This recipe is a wonderful way to nourish your body while enjoying a meal that tastes like comfort.

Gluten-Free Salmon Patties
(Makes about 6-8 patties)
Ingredients:
• 2 cans (each 6 oz) of wild-caught salmon, drained
• ½ cup almond flour
• 2 eggs, beaten
• ¼ cup finely chopped green onion
• ¼ cup finely chopped bell pepper
• 2 tbsp chopped fresh parsley (or 1 tbsp dried)
• 1 tsp garlic powder
• Salt and pepper to taste
• Olive oil or avocado oil for cooking
Directions:
For Stovetop:
1. In a large bowl, mix the salmon, almond flour, eggs, onion, bell pepper, parsley, garlic powder, salt, and pepper.
2. Form the mixture into patties using a ¼ cup measure.
3. Heat oil in a skillet over medium heat and cook the patties on each side for 4-5 minutes until golden and cooked through.
For Oven:
1. Preheat your oven to 400°F and line a baking sheet with parchment paper.
2. Prepare the patties as above and place them on the baking sheet.
3. Bake for about 15-20 minutes, flipping halfway through, until the patties are golden and cooked through.
