Granny Smith Apple and Chicken Sauté

When it comes to apples, most people think of pies, crisps, and other sweet treats. But today, I want to show you another way to enjoy these versatile fruits. I've always been a fan of Granny Smith apples for their tartness, and I'm excited to share a savoury dish that highlights their unique flavour.

Granny Smith apples are more than just tasty; they're also incredibly nutritious. They're rich in fibre, which aids in digestion and is packed with antioxidants. When combined with lean protein from chicken and healthy fats from olive oil, this dish becomes a balanced meal that aligns perfectly with a healthy lifestyle.

Granny Smith Apple and Chicken Sauté

(Serves 2)

Ingredients:

  • 2 boneless, skinless chicken breasts cut into strips
  • 2 Granny Smith apples, cored and sliced or diced 
  • 1 medium onion, thinly sliced
  • 2 cloves garlic, minced
  • 2 tbsp olive oil
  • 1 tsp dried thyme
  • 1 tsp dried rosemary
  • Sea salt and pepper to taste
  • ½ cup chicken broth

Directions: 

  1. Heat olive oil in a large skillet over medium heat.
  2. Add the chicken strips and cook until they are no longer pink in the middle, about 5-7 minutes. Remove the chicken and set aside.
  3. In the same skillet, add the sliced onion and garlic. Sauté until the onion becomes translucent.
  4. Add the sliced Granny Smith apples. Cook for about 5 minutes until they start to soften.
  5. Sprinkle thyme, rosemary, salt, and pepper over the mixture. Stir well.
  6. Return the cooked chicken to the skillet.
  7. Pour in the chicken broth and bring to a simmer.
  8. Cook for an additional 10 minutes, allowing the flavours to meld.

      9. Serve warm, perhaps over quinoa or brown rice
