Greek-Style Tuna Pasta Salad Recipe
Ingredients

12 oz (340 g) gluten-free fusilli pasta

2 cans (5 oz each) tuna in water, drained

1 cup cherry tomatoes, halved

½ cucumber, cut into half-moons or quarters

¼ cup red onion, finely diced

¼ to ½ cup pitted Kalamata olives

¼ cup fresh parsley, chopped

½ cup crumbled feta cheese (plus extra for topping, if you like)
Dressing

¼ cup olive oil
-
3 tbsp lemon juice
-
2 tbsp red wine vinegar
-
1 tsp dried oregano
-
1 small garlic clove, minced

Salt and black pepper, to taste
Directions
- Cook pasta in salted water until al dente. Drain and rinse with cold water to cool.
- Whisk olive oil, lemon juice, vinegar, oregano, garlic, salt, and pepper in a small bowl or jar.
- In a large bowl, mix cooled pasta, tuna, tomatoes, cucumber, onion, olives, parsley, and feta.
- Pour the dressing over top and toss well to coat.
- Refrigerate for at least 30 minutes before serving, allowing the flavours to come together.
