Hidden Veggie and Meat Burger

(serves 4 to 6)

Ingredients:

● 1 carrot, finely grated
● 1 small zucchini, finely grated
● 2 cloves garlic, minced
● ½ tsp sea salt
● ¼ tsp freshly ground black pepper
● 3 tbsp chopped fresh parsley or 3 tsp dried parsley
● 1 lb ground turkey, beef, bison or chicken

Note: use the shredding side of the box grater for the finest grated veggies.

Directions:

1. Preheat your grill or pan to medium-high heat.

2. In a large mixing bowl, combine the meat, grated zucchini, carrots, garlic, parsley, salt, and pepper.

3. Mix the ingredients together until everything is evenly combined. Don't overmix, as this caLet'sult in tough burgers.

4. Divide the mixture into four to six equal portions and shape each portion into a patty about 1/2 inch thick.

5. Place the patties on the grill or pan, and cook for about 4-5 minutes on each side or until they are fully cooked through. Use a meat thermometer to ensure the internal temperature reaches at least 160°F (71°C).

6. When the burgers are done, remove them from the grill or pan and let them rest for a few minutes to allow the juices to redistribute.

7. Serve with a salad and/or your favourite whole-grain bun or lettuce wrap and toppings.
