I love to experiment with flavours and spices from around the world. Even though I haven't walked the streets of Morocco, my Moroccan-Inspired Chicken dish brings a bit of its culinary spirit into my home. This dish is all about the spices – each one adds a special touch, creating a blend that's both tasty and interesting. It shows how the right mix of spices can turn simple ingredients into something really enjoyable and good for you. This recipe fits right in with my love for cooking that's both healthy and full of flavour.

The Moroccan-inspired chicken dish is not just a feast for the senses; it's also good for your health. The chicken thighs are a great source of lean protein, vital for muscle health and metabolism. The spices, including cinnamon, cumin, and turmeric, are more than just taste enhancers. Cinnamon is known for its potential in regulating blood sugar and its anti-inflammatory properties. With its curcumin content, turmeric acts as a powerful antioxidant, while cumin supports digestion. The addition of dried fruits like apricots introduces a natural sweetness and fibre, making this dish a balanced and wholesome choice.

Moroccan-Inspired Chicken 

(Serves 4)

Ingredients:

• 4 chicken thighs (skinless, bone-in for more flavour)
• 2 tbsp olive oil
• 1 large onion, finely chopped
• 3 garlic cloves, minced
• 1 tsp ground cinnamon
• 1 tsp ground cumin
• ½ tsp ground ginger
• ½ tsp paprika
• ¼ tsp ground turmeric
• 2 tbsp tomato paste
• Salt and pepper, to taste
• 1 can (14 oz) diced tomatoes
• 1 cup chicken broth
• 1 tbsp honey
• 1 cup dried apricots, halved or 1 cup raisins or sultanas or 1 cup of chopped dried figs or dates
• ½ cup almonds, toasted
• Fresh cilantro, chopped (for garnish)

Directions:

1. Season the chicken thighs with a pinch of salt and pepper for taste.
2. In a large skillet or pot, warm the olive oil over medium heat. Place the chicken thighs in the skillet and cook them until they achieve a golden-brown colour on both sides. Once done, transfer them to a plate and set aside.
3. In the same skillet, add the chopped onions and minced garlic. Sauté them until they turn soft and translucent.
4. Add the cinnamon, cumin, ginger, paprika, turmeric, and tomato paste to the skillet. Stir well and cook for about a minute until the mixture becomes aromatic.
5. Pour in ¼ cup of chicken broth. Stir the mixture, scraping up any browned bits from the bottom of the skillet. Let it cook for another minute.
6. Add the diced tomatoes, remaining chicken broth, and honey to the skillet. Stir everything to combine. Return the browned chicken to the skillet. Bring the mixture to a gentle simmer.
7. Reduce the heat, cover the skillet, and allow the dish to simmer for approximately 25 minutes.
8. Uncover the skillet and add your choice of dried fruit. Continue to simmer for an additional 15 minutes or until the chicken is fully tender.
9. Just before serving, sprinkle the dish with toasted almonds and freshly chopped cilantro.
10. Plate the chicken alongside a bed of fluffy couscous or rice, perfect for soaking up the delicious sauce.
