Nut Butter Oat Bars

This recipe is a game-changer when it comes to granola bars! Compare its ingredient list to the ones in store-bought bars, and you'll never look back.

For a chocolate-free option, swap out the chocolate chips for cacao nibs.

It may be tempting but resist the urge to cut the bars before cooling completely. Doing so will result in a crumbly mess, but a delicious one.

Nut Butter Oat Bars

(makes 16 servings)

Ingredients:

● 3 cups gluten-free rolled oats
● ¾ cup natural unsweetened nut butter or seed butter
● ⅓ cup honey or maple syrup
● ½ cup dairy-free mini semi-sweet dark chocolate chips
● 2 eggs
● Pinch of sea salt
● Optional add-ins: ¼ cup pumpkin seeds, 1/4 cup sunflower seeds, ¼ cup raisins, 1 tsp cinnamon

Directions: 

1. Preheat the oven to 350ºF, line a 9x9 inch baking pan with parchment paper.
2. Mix the honey or maple syrup, the nut or seed butter and two eggs in a small bowl until well combined; this might take a minute or two to come together.
3. Next, mix the rolled oats, chocolate chips and sea salt in a large mixing bowl, then add the wet mixture and stir until well combined.
4. Transfer the mixture to the baking pan and press into the pan to form an even layer.
5. Bake in the oven for about 15 minutes. The centre should feel slightly firm and the edges lightly browned; if not, bake for a couple more minutes. Remove the pan from the oven and let it cool completely on a wire rack before slicing it into 16 squares.

Try not to eat them all at once!
