Omelette with Smoked Salmon and Avocado

Eggs are usually associated with breakfast … but this delicious recipe can pass as a satisfying lunch or dinner too.

No matter when you eat it, it tastes like a special occasion meal (and bonus, it only takes a couple of minutes to pull together!).

Omelette with Smoked Salmon and Avocado

(Makes 1 serving)

Ingredients: 

● 2 large eggs
● Pinch of sea salt
● 1 tbsp extra-virgin olive oil
● ¼ avocado, sliced
● 1 oz  smoked salmon
● 1 tbsp chopped fresh herbs (basil, parsley, dill, etc.)

Directions: 

1. Crack the eggs into a small bowl and whisk thoroughly to combine.

2. Heat the oil in a small skillet over medium heat. Pour in the egg mixture. Cook until the bottom is set and the top is slightly runny – about 2 minutes. Carefully flip the eggs over and continue cooking until set, another 30-60 seconds.

3. Place the eggs on a plate and top with the avocado slices, smoked salmon, and herbs. 

Serve and enjoy!
