On my counter lay a trio of unlikely companions: overripe peaches, wilting jalapeños, and tomatoes that had lost their crispness. To many, they might seem destined for the compost, but drawing inspiration from the classic Pico de Gallo, an idea began to form. Why not introduce the sweet notes of peaches into the mix? And just like that, my Peach Salsa vision came to life. Instead of resigning these ingredients to waste, I saw a canvas for a zesty and sweet fusion.

Peach salsa isn't just about the flavours; it's also a health boost in a bowl. Peaches give you vitamins A and C, which are great for your skin and immune system. Tomatoes come with antioxidants, and bell peppers are full of vitamins. And those jalapeños? They've got capsaicin, which can help speed up your metabolism. Plus, cilantro is known for its detoxifying properties. So yeah, this salsa is not only tasty but also pretty good for you.

So, grab your apron and let's get cooking! 

Peach Salsa Recipe

(Makes about 4 cups)

Ingredients:

• 2 ripe yellow-fleshed peaches, pitted and diced (the sweeter, the better)
• 4 Roma tomatoes, seeded and diced
• 1 medium white onion, finely chopped
• 2 jalapeños, seeds removed and finely chopped (adjust to taste)
• 1 yellow pepper, diced
• 1 orange pepper, diced
• 1/4 cup fresh cilantro, finely chopped
• Juice of 1 lime
• Salt and pepper to taste

Directions:

1. In a large mixing bowl, add the diced peaches, tomatoes, white onion, jalapeños, yellow pepper, and orange pepper.

2. Stir in the finely chopped cilantro. Squeeze in the juice of one lime, and season with salt and pepper to taste.

3. Gently mix all the ingredients until well combined. Be careful not to over-mix, as you want to keep the texture of the ingredients.

4. Cover the bowl and place it in the refrigerator for at least an hour to allow the flavours to meld together.

5. Give it a taste before serving and adjust the seasoning if needed. 

6. Serve with tortilla chips, chicken or fish or as a topping for tacos or salads.

7. Your fresh and flavourful peach salsa is ready to be enjoyed!

Note: The sweetness of the peaches and the heat from the jalapeños can be adjusted according to your preference. Feel free to play around with the proportions to make this salsa your own!

Who knew that some old peaches, jalapeños and tomatoes could turn into something so good? It just goes to show that sometimes, the best dishes come from just playing around in the kitchen.
