I've adapted the Penne with Mushroom Sauce from the recipe Rigatoni with Thick Mushroom Sauce featured in this book. Penne with Mushroom Sauce

(Serves 4-6)

Ingredients:

• 1 bag (454g) Rizopia Organic Brown Rice Penne or your favourite penne pasta
• 1 tbsp unsalted butter
• ¼ cup extra virgin olive oil
• 1 lb brown cremini mushrooms, cleaned (do not use white)
• 4 oz shitake mushrooms, stems removed, thinly sliced
• 3 cloves garlic, minced
• ¼ tsp crushed red pepper
• 2 cups vegetable or chicken broth
• 1 ½ tbsp Italian parsley, finely chopped
• ¼ cup freshly grated Parmesan cheese
• Sea Salt to taste

Directions:

1. Begin by grating the mushrooms into a bowl using the largest hole on a box grater. Set aside.
2. Heat the olive oil and butter in a large skillet over medium heat. Add the grated mushrooms, sliced mushrooms, garlic, and red pepper. Sauté the mixture until the moisture from the mushrooms evaporates, which usually takes around 5 to 10 minutes.
3. Pour the broth into the skillet and increase the heat to high. Allow the ingredients to cook together for approximately 10 to 12 minutes. This will help the flavours blend and the sauce to reduce slightly.
4. Once done, remove the skillet from the heat and stir in the parsley and sea salt.
5. Cook the penne pasta according to the instructions on the package. Once cooked, drain the pasta and add it to the skillet. Gently toss the pasta with the mushroom sauce until it is well coated and heated through.
6. Take the skillet off the heat and add the grated Parmesan cheese. Stir the ingredients together to combine.
7. Enjoy immediately!
