Pepper, Egg and Cheese "Muffins"

Pepper, Egg and Cheese "Muffins"

(makes 4 servings)

Ingredients:

Use your favourite peppers… red, yellow, or orange, in this colourful and filling make-ahead breakfast.

● 4 medium bell peppers
● sea salt & freshly ground pepper (to taste)
● 8 large eggs
● ¼ cup shredded cheese of choice
● Avocado oil

Directions: 

1. Preheat your oven to 400°F, line a sheet pan with foil and brush with a little avocado oil.

2. Halve the bell peppers lengthwise and remove the ribs and seeds. Place the peppers cut side up on the sheet pan, and season with a little sea salt and pepper. Bake in the oven for 15 minutes.

3. Take the peppers out of the oven, drain any liquid that has formed, then crack one egg into each pepper half. Season with a little more sea salt and pepper and ½ tbsp of cheese of choice. Put the peppers back in the oven and bake for an additional 15-20 minutes until the eggs and peppers are cooked to your liking.

4. Once cooled, the "muffins" will keep in the fridge for up to 4 days in a tightly sealed container.
