Now, I know what you might be thinking - pork cutlets sound fancy and complicated. But trust me, this recipe is super easy and perfect for any night of the week. The pork cutlets are crispy on the outside and juicy on the inside, and the pan sauce adds a delicious savoury flavour that will leave you wanting more.

With just a few simple ingredients and some basic cooking skills, you can whip up a tasty meal that your family and friends will love. Whether you're an experienced cook or just starting out, this recipe is sure to become a go-to in your kitchen.

Pork Cutlets with Pan Sauce

Servings: 4 + leftovers the next day |Prep Time: 15-20 Minutes | Cook Time: 30-40 Minutes

Ingredients:

  • 3lbs boneless pork loin, cut into 16 pieces
  • 4 tbsp avocado oil, divided
  • 4 tbsp ghee, divided
  • 2 tbsp unsalted butter
  • 4 tbsp brown rice flour
  • 2 tsp sweet paprika
  • 1 tsp dried thyme
  • 1 tsp garlic powder
  • 1 tsp sea salt
  • 1 tsp pepper
  • ½ cup chicken broth
  • ½ cup dry white wine or more chicken broth
  • fresh parsley, chopped, for garnish

Directions: 

  1.  Mix brown rice flour, paprika, thyme, garlic powder, salt and pepper in a small mixing bowl and set aside.
  2.  Using a meat mallet, pound the pork cutlets to about a ½ inch thickness.
  3.  Put half of the pork cutlets into a Ziploc bag and add half of the seasoning mixture; zip the bag closed and shake to cover all the cutlets with the spice mixture. Once coated, put cutlets aside and repeat with the remaining cutlets.
  4.  Add 1 tbsp of oil and 1 tbsp ghee to a skillet and heat over medium-high heat.
  5.  Add 4 pork cutlets to the pan; you don't want to crowd the pan as it will steam the meat, cook for 3 to 4 minutes or until done. Once cooked, set aside on a plate and repeat with remaining pork cutlets. You will need to add 1 tbsp oil and 1 tbsp ghee for each additional cook.
  6.  Remove the pan from the heat and let cool for about 2 minutes; slowly add in a little white wine and swish around in the skillet; you don't want to add it all at once as it will splash back up, whisk around to scrape up any browned bits then carefully add in the rest of the wine. Cook the wine down by half, then add in 2 tbsp butter and continue to cook for about 2 minutes. Add in the chicken broth and continue to cook for another 2 minutes.
  7.  Return the cutlets to the pan and cook to heat the cutlets, spooning the sauce over the cutlets. The sauce should thicken a little as it cooks.
  8.  Remove from heat. Serve with mashed potatoes and sprinkle with parsley.
