Roasted Cauliflower with Turmeric

Prep Time: 10 minutes | Cook Time: 25 minutes

Ingredients:

• 1 large head cauliflower
• 1 tsp garlic powder
• 1 tsp onion powder
• ½ tsp ground turmeric
• ½ tsp sea salt
• ¼ cup avocado oil

Directions: 

1. Preheat oven to 400°F.
2. Chop the cauliflower into florets*
3. Mix the spices and avocado oil in a measuring cup and whisk with a fork to combine.
4. Place florets in a large mixing bowl and coat them with oil and spice mixture. It is best to use your hands to ensure all the florets are nicely coated; you will want to wear gloves.
5. Line a baking sheet with unbleached parchment paper, then place the cauliflower on the baking sheet. Ensure the pieces are in a single layer; use another baking sheet if necessary. Roast for 25 minutes until the cauliflower is tender and browned, stirring once at the 15-minute mark.
6. Serve immediately.

TIP: In my culinary nutrition course, I discovered a handy technique for cutting cauliflower with ease. First, grab a clean kitchen tea towel large enough to wrap around the cauliflower. Then, wrap the tea towel around the cauliflower and place the stem end down on a cutting board. Use a forceful motion to smash the cauliflower on the board 5 to 10 times until the florets separate from the stem. If you're feeling bold, you can skip the tea towel, but be prepared for the possibility of florets flying all over the place.
