This dish is not only easy to make, but it's also bursting with flavour and packed with healthy ingredients. The seared scallops are perfectly cooked and complemented by the crunchy and colourful veggie slaw, a refreshing and satisfying side dish. So let's get cooking!
Seared Scallops with Veggie Slaw
(makes 4 servings)
Ingredients:
● 1 avocado, peeled and seed removed
● 1 cup plain Greek yogurt
● 1 large lemon, juiced
● ½ cup chopped fresh parsley
● pinch of sea salt
● 455 bag of broccoli or veggie slaw mix
● 1 tbsp olive oil
● 1 lb scallops, patted dry
● freshly ground pepper
Directions:
1. To prepare the dressing, combine avocado, yogurt, lemon juice, parsley, and a pinch of salt in a blender. Blend until the mixture is smooth. If you want the dressing to be thinner, add small amounts of water, ½ tsp at a time.
2. For the slaw, place the slaw mix in a large salad bowl and pour the avocado dressing over it. Toss well to ensure that the slaw is well coated.
3. To sear the scallops, heat olive oil in a large skillet over medium-high heat. Add the scallops to the pan and cook for about 1-2 minutes per side or until browned. Remove from heat and sprinkle with pepper and additional salt to taste.
4. Serve the scallops with the slaw on a serving plate. Enjoy!
