I recently found this fantastic recipe in Alive magazine and thought, "I've got to try this!" After whipping it up once, it was clear this was a winner. But you know me—I couldn't resist adding a few of my own tweaks. So, here's my take: Sweet Heat Habanero & Honey Sauce.

This sauce isn't just a flavour bomb; it's got some health benefits too. Habaneros are loaded with capsaicin, which is great for reducing inflammation. As for honey, it's not just another sweetener. It has antioxidants and a lower glycemic index than regular sugar, so it's a bit easier on your blood sugar levels.

I've got to say, I love making hot sauces, especially ones I can enjoy later. There's something super cool about cracking open a jar months down the line and getting that same amazing flavour. This sauce is perfect for that—it's like a little jar of homemade goodness.

Sweet Heat Habanero & Honey Sauce

(Makes about 2-3 cups)

Ingredients:

• 4 whole garlic cloves
• 2 red bell peppers or 2 orange bell peppers, cored, halved and quartered
• 3 habanero peppers, deseeded and halved
• 1 large spanish onion, peeled and quartered
• 2 medium carrots, peeled and cut into chunks
• 5 tbsp extra-virgin olive oil for veggies, plus an extra 1 tbsp for the final sauce
• 1 tsp sea salt
• ½ cup white vinegar
• ¾ cup water
• ¼ cup fresh orange juice
• 3 tbsp raw honey (or more if you would like the sauce a little sweeter)

Directions:

1. Preheat your oven to 425°F.

2. Smash the garlic cloves and toss them in a large bowl with the red bell peppers, habaneros, onion, carrots, and 5 tbsp of olive oil. Make sure everything's well-coated.

3. Spread the veggie mix on a parchment-lined baking sheet. Roast for 15 minutes, give it a good stir and roast for two more 15-minute intervals. You're looking for a nice, browned finish.

4. Transfer the roasted goodies to a large pot. Add salt, vinegar, water, and orange juice. Let it all simmer for 10 minutes to meld the flavours. Take it off the heat and let it cool a bit.

5. Carefully blend everything in a high-speed blender until you get a smooth texture. Stir in the honey and the extra 1 tbsp of olive oil for a glossy finish. Taste and add more honey if desired.

6. Store your sauce in a sealed jar, or can it for future use.
