Today, I have a little confession to make. For the longest time, I thought turnips and rutabagas were the same thing. Can you believe it? The first time I tried an actual turnip, I braced myself for that bitter rutabaga taste. But guess what? I was pleasantly surprised! Turnips have this unique, earthy flavour far from a rutabaga's bitterness. It was a game-changer for me, so I'm so excited to share this Turnip and Leek Gratin recipe with you. It's a comforting dish perfect for a cozy dinner and packed with nutrients to boot.

Turnips are a fantastic source of fibre, vitamins, and minerals. They're particularly rich in vitamin C, which is essential for immune function and skin health. On the other hand, Leeks are a good source of antioxidants and can help improve digestive health. Combining these two in a gratin not only gives you a burst of flavour but also a ton of health benefits.

Turnip and Leek Gratin

Serves 4-6

Ingredients:

• 3 medium turnips, peeled and thinly sliced
• 2 large leeks, cleaned and thinly sliced (white and light green parts only)
• 2 cups heavy cream or dairy-free alternative
• 1 cup grated Parmesan cheese or dairy-free alternative
• 2 cloves garlic, minced
• 1 tsp dried thyme
• Salt and pepper to taste
• Olive oil for greasing

Directions:

1. Preheat your oven to 375°F (190°C). Grease a baking dish with olive oil.
2. In a skillet over medium heat, sauté the sliced leeks until they become soft and translucent. Set aside.
3. In a bowl, combine the heavy cream, minced garlic, dried thyme, salt, and pepper. Mix well.
4. In the greased baking dish, layer half of the sliced turnips, followed by half of the sautéed leeks. Pour half of the cream mixture over the layers and sprinkle with half of the grated Parmesan cheese.
5. Repeat the layering process with the remaining turnips, leeks, cream mixture, and cheese.
6. Cover the baking dish with aluminum foil and bake for 30 minutes. Remove the foil and bake for an additional 10-15 minutes, or until the top is golden brown and the turnips are tender.
7. Allow the gratin to cool for a few minutes before serving. Garnish with additional thyme or parsley if desired.
