I believe that cooking is all about creativity, experimentation, and finding the perfect balance of flavours. And this Whole-Grain Pasta Primavera recipe is a perfect example of that!

Whole-Grain Pasta Primavera

(serves 4-6)

Ingredients:

• 1lb whole-grain pasta, cooked al dente
• 1 red bell pepper, cut into slivers
• 1 medium zucchini, sliced
• 1/2 red onion, slivered
• 8 oz asparagus, trimmed and chopped
• 2 cloves garlic, minced or pressed 
• 1-pint cherry tomatoes, halved
• 2 cups chopped spinach
• 1/4 cup olive oil
• 1 tsp Italian seasoning
• 3 tbs grated parmesan cheese (optional)

Directions:  

1. To start, begin by cooking the whole-grain pasta al dente until it's just right - not too firm and not too soft. This is a crucial step in creating a dish with the perfect texture and mouthfeel.
2. Next, the vegetables, red bell pepper, zucchini, onion, asparagus, garlic, cherry tomatoes, and spinach. Cut them all into even, bite-sized pieces so that they cook evenly and look beautiful on the plate.
3. In a large sauté pan, heat up some olive oil and sauté the onions and peppers until they're nice and soft. Then, add in the other vegetables along with some Italian seasoning and continue sautéing until they're all perfectly cooked.
4. Once the veggies are ready, add the cooked pasta to the pan and toss everything together until the pasta is nicely coated in all the delicious flavours. And finally, stir in the chopped spinach, which wilts down from the heat of the other ingredients.
5. For a finishing touch, sprinkle some grated parmesan cheese on top - this is optional, but it adds a nice depth of flavour and richness to the dish.
