
Soup season is here, and I'm all about giving classic dishes a bit of a makeover to fit our healthier lifestyles without sacrificing flavour. Today, I'm excited to share my twist on the traditional Portuguese Caldo Verde soup, substituting potatoes with cauliflower for a lighter yet equally satisfying bowl.
Cauliflower Caldo Verde
(Servings 6-8)
Ingredients:
- 1 large cauliflower, chopped into florets
- 1 large bunch of kale, stems removed and leaves thinly sliced
- 1 large onion, peeled and diced
- 4 cloves of garlic, minced
- 2 -3 chorizo sausages, thinly sliced
- 2 containers (946 ml each) of chicken broth
- 2 cups of water
- Salt and pepper, to taste
Directions:
1. Sauté the onion and garlic in a large pot until translucent. Add the cauliflower florets and continue to sauté until they start to soften and change colour slightly.
2. Add the chicken broth and water, cover, and bring to a boil. Reduce the heat and simmer for about 30 minutes or until the cauliflower is very soft.
3. While the cauliflower cooks, cook the chorizo slices in a separate pan until heated through. Remove from the pan and set aside on a paper towel to drain.
4. Once the cauliflower is tender, use an immersion blender to puree the soup directly in the pot. Be careful, as the mixture will be hot. If you don't have an immersion blender, you can carefully transfer the soup in batches to a regular blender.
5. After blending the soup to a smooth consistency, add the cooked chorizo back into the pot, along with salt and pepper to taste. Stir in the kale and let the soup simmer uncovered until the kale is tender and bright green, about 5-10 minutes.
6. Ladle the soup into bowls and enjoy hot. To keep it healthy and hearty, pair this dish with a slice of whole grain or sourdough bread. These bread options are rich in nutrients and fibre, offering a more balanced addition to your delicious soup.
