Cauliflower is one of my favourite vegetables; I could eat it at every meal, cooked or raw. There's something about its versatility and subtle flavour that makes it a staple in my kitchen. Today, I'm sharing a recipe that takes this humble veggie to the next level—Garlic and Manchego Cauliflower Mash. It's comfort food with a healthy twist, and I promise you're going to love it!

Cauliflower is rich in essential vitamins and minerals, making it a nutritious choice for any meal. It's also a good source of antioxidants and fibre, which are known for their role in promoting overall health. Garlic adds a wonderful depth of flavour to the dish, while Manchego cheese brings in a nutty richness along with some added protein and calcium.

Garlic and Manchego Cauliflower Mash

(Serves 4)

Ingredients:

• 1 large head of cauliflower, cut into florets
• 2 cloves garlic, peeled
• 1 cup Manchego cheese, grated
• ¼ to ½ cup oat milk or cream
• 2 tbsp avocado oil or butter
• Salt and pepper to taste
• Optional: Chopped chives or parsley for garnish

Directions:

1. Place cauliflower florets and garlic cloves in a steamer basket over a pot of boiling water. Cover and steam for about 15-20 minutes, or until the cauliflower is fork-tender.
2. Remove the cauliflower and garlic from the steamer and let them drain to remove excess moisture; this helps make the mash creamier.
3. Transfer the steamed cauliflower and garlic to a food processor. Add avocado oil or butter and blend until smooth.
4. While the food processor is running, slowly add the oat milk or cream until you reach your desired consistency.
5. Add the grated Manchego cheese and blend again until well incorporated.
6. Add salt and pepper to taste. Give it one last blend to mix everything well.
7. Transfer the mash to a serving bowl and garnish with chopped chives or parsley if you like.
8. Serve warm as a side dish or as a base for your main course.
