Poached Pears with Dark Chocolate and Walnuts

Here’s a surprisingly easy dessert that is low in added sugars, takes no time to make and is super yummy!

Poached Pears with Dark Chocolate and Walnuts

(serves 4)

Ingredients: 

● 4 ripe pears (use a firm variety like Bosc)
● ¾ cup unsweetened apple juice
● ½ cup red wine
● 3 cinnamon sticks
● ¼ cup chopped walnuts, toasted
● Blue cheese crumbles (optional)

Spiced Chocolate Sauce
● 2 oz dark chocolate, roughly chopped
● ½ tsp pumpkin pie spice mix

Directions: 

1. Poach the pears: Peel the pears, then cut them in half lengthwise and remove the cores. Place the pears cut side down in a sauté pan. Pour the apple juice, wine, and cinnamon sticks over the pears.
2. Place the pan on medium-high heat and bring the liquid to a simmer. Cover and cook for 5-7 minutes, until cooked through but firm – poke them with a fork to test.
3. Flip the pears over and cook another 1-2 minutes. Using a slotted spoon, remove the pears from the pan and onto serving plates.
4. Toast the walnuts: while the pears are cooking, place chopped walnuts in a sauté pan over medium heat, heat the walnuts until browned and fragrant, shaking the pan every few minutes or so to check the colour.
5. Remove the walnuts from the pan and set aside to cool.
6. Melt the chocolate: Place a pot of water on the stove and bring to a gentle boil, then reduce to a simmer.
7. Place the chocolate in a metal bowl that will fit the opening of the pot entirely, so no steam escapes; the bowl should not touch the water.
8. Place the bowl on top of the simmering water, frequently stirring until melted, then add in the spices and stir to combine.
9. Remove the bowl from the pot carefully, drizzle the chocolate over the pears.
10. Top with toasted walnuts and blue cheese (optional)
