Beets have always had a special place in my heart, reminding me of holiday dinners with my Nana. Her pickled beets were a staple at our family gatherings, and I looked forward to them every year. While those memories are dear to me, I've found a new way to enjoy beets that are both delicious and nutritious.

This Roasted Beet Salad with Goat Cheese and Walnuts is more than just a tasty dish; it's a nutritional powerhouse. Beets are known for their liver-detoxifying properties and their ability to boost stamina. They're also high in fibre, aiding in digestion and helping you feel full longer. Walnuts add a satisfying crunch and are packed with healthy fats that are good for your brain and heart. Roasted Beet Salad with Goat Cheese and Walnuts 

(Serves 4)

Ingredients:

  • 4 medium-sized beets, peeled and diced
  • 2 tbsp olive oil
  • Salt and pepper to taste
  • 4 cups arugula
  • ½ cup goat cheese, crumbled
  • ¼ cup walnuts, chopped
  • ¼ cup balsamic vinaigrette

Directions: 

  1. Preheat your oven to 400°F
  2. Toss the diced beets in olive oil, salt, and pepper. Spread them out on a baking sheet lined with parchment paper.
  3. Place the baking sheet in the oven and roast for about 25-30 minutes or until the beets are tender. Remove from the oven and let them cool.
  4. In a large bowl, combine the arugula, roasted beets, crumbled goat cheese, and chopped walnuts.
  5. Drizzle the balsamic vinaigrette over the salad and toss gently to combine. Serve immediately.
