Roasted Parmesan Zucchini

(serves 4-6)

Ingredients:

  • 4 medium zucchini
  • 2 tbsp olive oil
  • 1/2 cup grated Parmesan cheese
  • 1 tsp garlic powder
  • 1 tsp dried Italian seasoning
  • Salt and pepper to taste

Directions: 

1. Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper or lightly grease it.
2. Wash the zucchini and cut off the ends. Slice them into 1/4-inch thick rounds.
3. In a large bowl, toss the zucchini slices with olive oil until they are well coated.
4. In a separate bowl, combine the grated Parmesan cheese, garlic powder, dried Italian seasoning, salt, and pepper.
5. Dip each zucchini slice into the Parmesan cheese mixture, pressing lightly to adhere the cheese to both sides of the zucchini.
6. Place the coated zucchini slices in a single layer on the prepared baking sheet.
7. Bake in the preheated oven for about 15-20 minutes, or until the zucchini is tender and the Parmesan cheese is golden brown and crispy.
8. Remove from the oven and let the zucchini cool for a few minutes before serving.
