(serves 4)

• 4 bay leaves
• 2 pounds of wild-caught shrimp, peeled and deveined (fresh or frozen)
• 8 cups of Baby Spinach, chopped
• 1/2 cup of fresh basil, chopped

Directions:

1. Start by pressing the garlic and chopping the scallions.
2. Chop the fennel and summer squash into bite-sized pieces, ensuring they cook evenly and impart their essence to the stew.
