Sweet Potato and Coconut Soup
(Makes 4-6 servings)
Ingredients:
• 2 large sweet potatoes, peeled and cubed
• 1 can (400 ml) coconut milk
• 1 medium onion, chopped
• 2 cloves garlic, minced
• 1 thumb-sized piece of ginger, grated
• 4 cups vegetable broth
• 2 tbsp olive oil
• Salt and pepper to taste
• Optional: a pinch of chili flakes for some heat
Directions:
1. Peel and cube the sweet potatoes. Chop the onion, mince the garlic, and grate the ginger. Set aside.
2. In a large pot, heat olive oil over medium heat. Add the chopped onion, garlic, and ginger. Sauté until the onions are translucent, about 5 minutes.
3. Add the sweet potato cubes to the pot and stir well, coating them in the onion mixture.
4. Add the vegetable broth to the pot, bringing the mixture to a boil. Reduce heat and let it simmer until the sweet potatoes are fork-tender about 20-25 minutes.
5. Using an immersion blender or transferring to a stand blender, carefully blend the soup until smooth.
6. Stir in the coconut milk and bring the soup back to a gentle simmer. If the soup is too thick, you can add a little more broth or water to reach your desired consistency.
7. Add salt, pepper, and optional chili flakes to taste.
8. Ladle the soup into bowls and enjoy! Optional: garnish with a drizzle of coconut milk or some fresh herbs or toasted pumpkin seeds.
